A feralmuse family recipie:
MUFFIN TIN POPOVERS
"buttery bread-y things you make in muffin tins... they come out odd and squishy in the middle and hollowish"
2 cups flour
2 cups milk
4 eggs slighly beaten
1 t sugar
1/4 t salt
Combine all ingredients, beat with electric mixer until smooth (JUST until smooth- some lumps OK). Place well greased muffin tin(s) in oven for 3 minutes or until a drop of water sizzles when dropped in them. Remove tins from oven, fill half way with batter. Bake at 450 for 25-30 min. Serve immediately. Makes 16-20 popovers
...when I say "well greased muffin tin" I mean- my mom sprays them with pam then puts in about 1/4 t of margarine and lets that melt in the oven
If they look freaking weird then you did it correctly ;) ...and like, they work right 80% of the time...
..otherwise they are .. .popunders >.<

Apparently the secret to making sure they pop is to NOT let the muffin tins cool off too much while you fill them and before they go back in.
